How to prepare a Pisco Sour

Since 2003, Peru has celebrated a National Pisco Sour Day on the first Saturday of February. Here, pro-bartender Anton Forte – co-owner of Sydney's Shady Pines Saloon – shares his step-by-step guide for preparing this classic cocktail.

Fill a glass with ice. Pour 60ml Pisco into a Boston glass or cocktail shaker. Source: SBS Food



Anton's step-by-step guide to the pisco sour (see slideshow above)

  1. Fill a glass with ice. Pour 60ml Pisco into a Boston glass or cocktail shaker.

  2. Add 20ml sugar syrup, 30ml lemon juice, 3 dashes of bitters and 1 egg white.

  3. Shake the cocktail well to emulsify the egg white.

  4. Add ice to the Boston glass or cocktail shaker.

  5. Shake vigorously.

  6. And shake a little more.

  7. Strain the cocktail into a glass filled with one massive ice cube.

  8. Using a spoon, carefully top with three drops of bitters.

  9. Serve immediately.
