Sushi has been around for many centuries in Japan, and has been in Australia in recent years. But while you might be familiar with sashimi, temaki and nigiri, to celebrate tomorrow (June 18), why not take a walk on the wild side of sushi, with one of these new variations.
Sushi burger
Featuring a bun made of sticky rice, you can either keep it very healthy with traditional sushi accompaniments like raw fish, ginger, seaweed and wasabi, or go a little bit decadent with some pulled pork, chicken katsu and lashings of mayonnaise.
Sushi cake
Don't have a sweet tooth? Why not celebrate your birthday with a sushi cake. Just as pretty as a normal cake, and a lot healthier.
Sushi art
Some of this just looks too good to eat. Takayo Kiyota, who goes by the name , is a master of sushi art.
Sushi taco
Where Japanese meets Mexican food, you will find the sushi taco. It turns out nori makes a surprisingly good taco shell.
Rainbow sushi
It's not the first rainbow food, and it won't be the last, but surely it has to be one of the prettiest.
Sushi donut
Don't worry, there's no glaze on this donut. It's just made in a donut-shaped mold.
Sushi pizza
The sushi pizza uses a slightly crispy yet chewy, fried rice patty as the base.
Sushi sandwich
Just as easy to eat as a maki roll, but triangular in shape.
Sushi burrito
The sushi burrito, or sushirrito, is like the granddaddy of the maki roll - bigger and bursting with filling.
Deconstructed sushi bowl
If you love sushi, but just can't be bothered making it pretty, this might be for you.
