Reindeer
Praised for its low fat content, reindeer is a fine-textured meat with a gamey flavour. Reindeer may be served roasted, smoked or as a steak.
Cloudberries
Found mainly in the north of Finland during summer, cloudberries are one of the most delicious and costly berries. The berries are soft and juicy, and will be a yellow colour with a tinge of orange when ripe. Cloudberries are eaten raw, and are a popular addition to desserts. They are often preserved by being made into a jam or can be frozen.
Rye bread/finn crisp
This thin rye crispbread has a slightly sour taste, the result of lactic fermentation.
Viili
Also known as curd soup, viili is a popular yoghurt-like product with a gelatinous, almost slimy texture and sour flavour. It's made by curdling milk with a starter bacteria. It's eaten fresh and chilled and is a common breakfast food in Finland. It may be served with sugar, cinnamon, honey or other spices.
Roe
Roe refers to the eggs or spawn from the ovaries of female fish. Sturgeon caviar is among the most famous and expensive varieties. In Finland, there are some of the best alternatives to caviar, utilising fish roe from vendace, whitefish and burbot.
