French Toast – αυγοφέτες
Ingredients
3 eggs
1 cup milk
¼ cup pure cream
1 tsp vanilla extract
½ tsp cinnamon
½ tsp nutmeg
1 tsp orange zest
¼ tsp salt
6 slices stale sourdough bread (2cm thick)
Butter for frying
Greek yoghurt, honey & toasted walnuts – to serve
Method
In a bowl whisk together the eggs, milk, cream, vanilla, spices, orange zest and salt.
Soak 2 slices of bread in the egg mix, turning to ensure both sides are well covered. You will need to do this in batches.
Heat a fry pan and add a spoonful of butter. When melted add the soaked bread. Cook each side until golden. Keep in a warm place and repeat until all the French toast is cooked. You will need to add a spoonful of butter each time you fry a new batch.
To serve, add some thick Greek yoghurt, drizzle with honey and garnish with toasted walnuts.
