Φασολάκια λαδερά με φρέσκια ντομάτα

Τα λαδερά φασολάκια, με φρέσκια σάλτσα ντομάτας, είναι ένα από τα πιο δημοφιλή χορτοφαγικά καλοκαιρινά πιάτα. Η Άντζελα Νικολέτου, μας δίνει τη δική της εκδοχή.


Fasolakia - green bean stew

Ingredients

500g fresh tender green beans

4 large tomatoes, peeled and diced or 1 can tomatoes

3 potatoes, peeled and quartered

1 onion, diced

½ bunch parsley, chopped

½ cup extra virgin olive oil
Method

Cut tops off beans and prepare all ingredients.

Heat oil in a small saucepan or fry pan and add the onion. Cook until it softens.

Add the potatoes and beans and stir until they are coated with oil. Add the tomatoes and ½ cup of water.

Season with salt and pepper. Simmer, stirring occasionally until the potatoes are cooked and the beans begin to soften (about 30 minutes). Add the parsley and cook for a further 2 minutes.

Serve warm or at room temperature.
