A Spanish inspired recipe by Angela Nicolettou. Versatile, quick, easy and packed with flavour. Enough said! it's time and get in the kitchen


Chicken with smoked paprika

Ingredients

4 chicken thigh fillets

3 cloves garlic, crushed

Juice of a lemon

3 tsp hot smoked paprika

2 tbs extra virgin olive oil

Parsley for garnish
Method

Add the chicken and the remaining ingredients in a bowl, season and mix well. Cover and refrigerate until needed – overnight is good.

Heat oven to 180C.  Place marinated chicken in a baking dish, drizzle with a little olive oil, add ½ cup water and bake for 45 mins or until cooked and easily falling apart. Remove and rest for 10mins before cutting into slices. Sprinkle with chopped parsley and serve.

You can use other cuts of chicken like drumsticks, wings and breast.

Works well on the BBQ.

Can be served on a bed of lettuce or rice.

Accompaniments: green salad of your choice, steamed broccoli, mushroom pilaf, Greek salad.
