Cypriot tavas

Tavas is a traditional Cypriot meat -based dish. The meat, usually lamb, was baked in the oven in a clay dish with a lid called tava. In this recipe, Angela Nicolettou, uses a simple oven dish without compromising the taste or the consistency of the end result.


Tava (Cypriot lamb bake)

Ingredients

1 kg lamb chops

1 kg potatoes, cut into thick slices

2 onions, sliced

4 tomatoes, sliced or 1 can diced tomatoes

2 tsp cumin seeds

½ cup parsley, chopped

½ cup extra virgin olive oil
Method

Heat oven to 180C.

In a large baking dish place all the ingredients as well as salt and pepper (make sure to season the lamb well) and gently mix to combine. Add half a cup of water, cover with foil and bake for 45 minutes.

Remove foil and bake for a further 45 minutes or until the lamb and potatoes are well cooked.
