Eating lamb is inextricably linked to the Resurrection, symbolising Christ's sacrifice for the salvation of mankind.


The lamb is the main protagonist of the Easter table, symbolising the sacrifice of Jesus Christ.

Today, with the help of chef Rafail Patera, we present an authentic recipe from Kalymnos, the stuffed lamb with rice, or mououri.

Lamb mououri of Kalymnos

Ingredients you will need:
3 kg of rice
4 onions
250g butter
1 kg of tomato paste
2 kg of liver
1 tbsp. cinnamon
1 tsp. pepper
3 tablespoons salt

For the lamb spread
250 g butter
250g tomato paste
Salt
Pepper
Cinnamon
