You will not be able to resist this recipe for Greek vegan cookies with spices, olive oil and sweet wine! Angela Nicolettou shares her recipe.


Spiced Greek biscuits – koulourakia

Ingredients

1 cup olive oil 

1 cup caster sugar

1/2 cup sweet red wine – such as mavrodaphne

zest of 1 lemon

zest of 1 orange

1 tbs cinnamon, ground

1 tsp cloves, ground

4 cups plain flour

2 tsp baking powder

1 tsp baking soda
Method

Sift the flour with the baking powder and soda and mix through the cinnamon and cloves.

In a mixing bowl add the sugar, olive oil, wine, orange and lemon zests and beat till well combined.

Slowly add the flour mixture to the oil mix and kneed to form a firm but not sticky dough. At this point use a dough hook or kneed on a work bench. If needed, add a little extra flour. Let the dough rest for 15 minutes before shaping into biscuits.
Heat oven to 180C and line a baking tray with baking paper or oil lightly.

Take a small amount of dough and roll with your hands into a 22 cm length the thickness of a pencil. Cut this into three equal length pieces and then plat so you have a platted biscuit about 7 cm long (measures are very approximate). Repeat with remaining dough.

Place biscuits on prepared baking trays and bake for about 20 minutes. Remove from oven and let cool. Store in an airtight container.
