On a hot summer's day try a cool salad with watermelon, manouri cheese and rose syrup. Follow Angela Nicoletou's recipe for a healthy, refreshing treat. Rose petals optional!


Watermelon salad with rose syrup

Ingredients

Watermelon

Manouri cheese (or feta or goat’s cheese)

1 cup sugar

1 tbs rose cordial

1 tsp rose water

Mint leaves

Method

Place sugar in a small saucepan with 1 cup water and bring to the boil, stirring occasionally to dissolve the sugar. Boil for 5 minutes.

Remove from heat and stir through the cordial and rose water. Let cool.

Cut the watermelon into slices or large cubes and place on a platter. Cut the cheese into cubes and scatter over the watermelon. Drizzle with the rose syrup and scatter with mint leaves before serving.

Variations

Add rose liquor to the syrup. The leftover syrup keeps well in the fridge. 

You can substitute manouri with haloumi, feta, mozzarella or goat's cheese.
