Cherry spoon sweet

Spoon sweets are among the most popular and traditional Greek sweets. It's a beautiful way to preserve and enjoy seasonal fruits all year round. Give it a go and try Angela Nicolettou's recipe for cherry spoon sweet.


Cherry spoon sweet

Ingredients

1 kg cherries

1 kg sugar

¼ cup orange blossom water

2 cups water

½ cup lemon juice
Method

Wash cherries and remove pips.

Add the sugar, orange blossom water and 2 cups of water in a medium sized saucepan and boil, stirring occasionally, until the sugar dissolves. Add the cherries and bring to the boil again. Simmer for 5 minutes.

Remove from the heat and cover. Leave it for 24 hours.
The next day, add the lemon juice and bring the saucepan to the boil. Continue to simmer stirring occasionally, until setting point is reached (about 20 minutes). 

To test for setting point, drip some syrup onto a cool plate and look for the droplet holding its shape. Remove from heat and place in sterilised jars.

Once opened, the spoon sweet should be stored in the fridge.
