Ricotta fritters with honey and lemon

Ingredients

250g ricotta

¼ cup caster sugar

2 eggs, lightly beaten

½ cup plain flour

pinch salt

1 tsp baking powder

1 tbs lemon juice

1 tsp lemon zest

½ tsp vanilla paste

Sunflower oil for frying  

Warmed honey, cinnamon & toasted walnuts, to serve

Method

In a bowl mix the ricotta, sugar, eggs, vanilla, lemon juice and lemon zest. Mix the flour, salt and baking powder in a separate bowl and add to the ricotta mixture. Gently stir to combine and let the batter rest for 10 minutes.

Add oil (one third high) to a deep pan or saucepan and heat it to 180C. When hot use a tablespoon to add balls of batter to the hot oil. Fry until golden, turning occasionally (about 3 minutes). Remove and drain on kitchen paper.

Serve with a drizzle of honey, a sprinkle of cinnamon and toasted walnuts.
